The family estate « Domaine des Hautes Noelles » was established in the 1930s in the small village of “Saint Léger les Vignes”, where, a recently discovered manuscript mentions vines growing in the area as early as 1180. Currently, the winery works across 24 hectares of vines. During 2012, the estate underwent legal process to become completely certified organic, despite not using pesticides, herbicides or other chemical products for many years beforehand. As well as focusing uniquely on natural products, he has also successfully reintroduced some more traditional practices which he believes are much more respectful to the environment, like plowing for example, which he believes have restored great minerality in his wines.
